Cost-effectiveness of controlling Salmonella in the pork chain

چکیده
Pork is one of the sources of food-borne salmonellosis in humans. In this paper, the cost-effectiveness of different control scenarios against Salmonella in the stages finishing, transport, lairage and slaughtering is explored. A stochastic simulation model was used for the epidemiological analysis and a deterministic model for the economic evaluation. Results showed that the cost-effectiveness of interventions in the finishing and slaughtering stages is the highest with respect to the reduction of the prevalence of contaminated carcasses. However, the cost-effectiveness is reduced in case not all farms or firms within a stage intervene to reduce the prevalence of Salmonella. 2003 Elsevier Ltd. All rights reserved.

Control of Salmonella in the Pork Production Chain
Salmonella remains an important foodborne pathogen of concern to public health and therefore, the swine industry. Significant strides have been made at decreasing Salmonella contamination in one link of the pork chain, namely, at slaughter and processing. It is expected that standards at slaughter and processing will become more stringent, creating pressure from packers and processors to reduce...
متن کاملEpidemiological and economic simulation of Salmonella control in the pork supply chain
Pork can be regarded as an important source for food borne salmonellosis. Salmonella bacteria can be introduced and spread in every stage of the pork supply chain and cause a risk for food safety. The objective of this research is to gain insight into the epidemiological and economic effects of different strategies in the finishing, transport, lairage and slaughtering stages to improve the food...
متن کاملThe influence of Salmonella in pigs pre-harvest on Salmonella human health costs and risk from pork
Salmonellosis in people is a costly disease, much of it occurring because of food associated exposure. We develop a farm-to-fork model which estimates the pork associated Salmonella risk and human health costs. This analysis focuses on the components of the pork production chain up to the point of producing a chilled pork carcass. Sensitivity and scenario analysis show that changes that occur i...
متن کاملImplementing a Salmonella Monitoring Programme for Pork in Germany
The history of the development of a national Salmonella monitoring system and its implementation as the “Salmonella Monitoring and Reduction Programme” in the framework of the development of the voluntary German “Quality and Safety System” (= “QS-System”) for food production beginning with the pork production chain is explained. Especially the necessary steps that need to be taken to achieve th...
متن کاملTitle: Novel molecular approaches for the rapid detection of Salmonella from pork products and the pork
Novel rapid, sensitive, and simple detection assays that can be routinely used to prevent the transmission of Salmonella in the pork industry are in high-demand. Reverse-transcriptase Loop-mediated isothermal Amplification (RT-LAMP) assay is a novel molecular method that has advantages over real-time reversetranscriptase Polymerase Chain Reaction (RT-PCR) in that it does not require expensive e...
